You can only hide your video altogether using the Stop Video button in Gallery View. However, that hides you from everyone else, too, defeating the point of letting other participants see you while you hide from yourself.

Find your image on the gallery screen. Right-click your image to show a small pop-up menu. Click Hide Self View. You’ll appear off-screen now to yourself, but others will still see you.
